Using a medium with the same conditions of the gastric environment, the scientists sampled levels of SOD over time. The antioxidant activity of free SOD was destroyed within about 10 minutes. However, when SOD was protected by Gliadin, its enzymatic activity was preserved. The enzyme was released after about 30 minutes, reaching maximum of its activity after 80 – 100 minutes.<\/p>\n
